But if you prep the vegetables in the night, all you have to do is add them to your frying pan and the total cooking time will come down to 5 minutes.
This nutritious and healthy lunch of vegetable stir fry and beef is loaded with protein, iron, antioxidants, Beta carotene, Dietary fiber, Vitamin C, Calcium and heart/ belly fat friendly Omega – 3 Fatty acids
You can mix it up with rice, Moi – Moi, sweet potato or enjoy the delicious stir fry alone.
Meet the ingredients
½ cup of carrot
½ cup of green pepper
½ cup of green beans
½ cup of onion
2 garlic cloves
Curry, Rhyme and rosemary
1 red chili Pepper,
Salt and cube seasoning to taste
3 tbsp of olive oil

How to prepare mixed vegetable stir fry with beef
Season and boil the meat. When it’s done remove the stock and cut the beef into small pieces
Cut the carrot, green beans, green pepper, red chili pepper, and onion.
Crush the 2 garlic cloves
Grind the crayfish into powder
Heat 3 spoonfuls of your preferred oil (I used olive oil) in a frying pan over medium heat
Add the onion, garlic, curry, thyme, rosemary, ground crayfish and seasoning cubes.
Stir fry for 1-2 minutes or until onion is just softened
Increase the heat to high
Add the beef and vegetables.
Stir for another 2-3 minutes, till the vegetables are done. (The vegetables should be crispy and tender not soggy).
Season to taste
You can also eat with rice, potato or yam.
